William Henry Knight, born at Badsey in 1854,  wrote this booklet when in retirement in Bedford.  It concerns his wife, Susannah Elizabeth Rice, whom he married in 1878. Whilst William was working as assistant to Dr F T Bond, Medical Officer for Gloucester and Monmouthshire, Susannah was recruited by Dr Bond (who was an enthusiast on questions of health and domestic economy) to give cookery demonstrations in order to illustrate certain principles he was going to talk about.  This launched a domestic science career for Susannah, which is detailed in this booklet.
